Vol. 02 / Autumn 2026 — A temporary dispatch

The fruit is turning on the branch.

The autumn olive harvest is coming to the Andalusian groves. This is the season the apothecary is built around — the narrow window when stressed, sun-held fruit reaches its polyphenol peak and is pressed cold, fast, and intact. What follows is a field report on the work ahead, and how to stand close to it.

Why this season

The harder the olive tree works to live, the more polyphenols its fruit carries — and the more the oil gives back to the body that receives it.

The autumn harvest is the whole calendar compressed into a few weeks. The trees that survived the dry summer have spent their stress as chemistry — oleuropein, oleocanthal, hydroxytyrosol stored against the coming cold. We do not improve on this. We collect it before oxidation takes its share.

This is what we mean by biotechnic — the patient, humble work of carrying a living compound from a living tree to a living body, without breaking it. The harvest is not a marketing event. It is the one time of year the tool is actually being made.

From branch to tin

Four phases
  1. 01

    VERAISON

    The Fruit Turns

    Through October the olives move from green to purple — veraison. The fruit that hangs longest under stress carries the densest polyphenol load. We do not harvest for yield. We harvest for compound.

  2. 02

    PRESS

    Cold Within Hours

    Picked at dawn, pressed cold within hours of leaving the branch. Every hour between tree and mill is polyphenol lost to oxidation. Speed is not efficiency here — it is molecular preservation.

  3. 03

    ASSAY

    The Certificate of Analysis

    Each lot is sent to an independent lab. We publish the certificate of analysis beside the tin. The polyphenol number is not marketing; it is a measurement, signed and dated.

  4. 04

    TINS

    Sealed From Light

    Dark glass, nitrogen-sealed, dated to the pressing. The oil you receive is the oil the tree made — nothing adjusted, nothing refined away. A biotechnic tool, intact.

What is coming

Three oils, one season — pressed in the order the fruit ripens.

Early Harvest — Arbequina

Onsuri Premium

The first fruit off the tree, pressed green and peppery. The arbequina lots that became last season's 1,504 mg/kg oil. Expect a high, bright sting — oleocanthal at its sharpest.

Mid Harvest — Arbosana

Onsuri Arbosana

Picked a week later, dense and balanced. Last season's lot tested at 651 mg/kg — a calmer, rounder oil that still carries a clean polyphenol load.

The Everyday Oil — Picual

Tropicual EVERYDAY

Harvest Updates

When the first lots are pressed and the certificates are filed, you will be the first to know.
